Good quality red chilli powder made from whole dried red chillies typically has a deep, natural brick-red to dark red colour. An unusually bright, almost fluorescent red can sometimes indicate added colouring agents rather than natural chilli pigment.
2. Aroma
Pure chilli powder has a distinct, slightly smoky, pungent aroma. If it smells flat, dusty, or has little to no aroma at all, the powder may be old or diluted with fillers.
3. Texture
Stone-ground chilli powder tends to have a fine, slightly uneven texture rather than a completely uniform, ultra-fine powder โ very smooth, talc-like textures can sometimes indicate added starch or fillers.
4. Check the Ingredients Label
The ingredients list should read simply as "100% red chillies" or similar โ with no mention of starch, colour additives, or other fillers. This is one of the most reliable ways to verify purity.

Colour and heat don't always go together โ some chilli varieties are chosen specifically for deep colour with mild heat (used in many restaurant-style curries), while others are prized for high pungency. If you want a specific balance, check the variety used rather than judging by colour alone.
